CAROLINE JACKSON, OWNER

It is Caroline’s deep appreciation for cuisine, and a desire to use her knowledge to help create healthy living alternatives for others, that have led her to begin her latest venture, Fuel. Fuel is food for life: an easy and affordable way of eating for optimum pleasure and health.  

Having worked with some of the most renowned chefs in New York and at some of Charleston’s most popular and innovative restaurants, owner Caroline Jackson brings over ten years of culinary experience to Fuel.

Before moving to Charleston in 2004, a place where she spent many idyllic years of her childhood, Caroline worked for four years in New York City under the leadership this decade’s most important Italian restaurant duo: chef Mario Batali and restaurateur Joseph Bastianich. Starting as the Assistant Director of Operations at Batali’s four-star Babbo restaurant, Caroline quickly became an integral part of the B&B team and went on to help open and run as general manager two of Batali and Bastianich’s successful ventures, OTTO Enoteca Pizzeria and The Spotted Pig. (With a father who owned restaurants in Washington, D.C and Virginia, Caroline’s real love of food began at a very early age, and was further flamed when she attended Le Cordon Bleu in Paris in 1995.)

For the past five years, Caroline has also worked as Program Committee Chair and Food Manager for the Charleston Food + Wine Festival, coordinating large-scale events, cooking demonstrations, and wine seminars.

Now, back in Brooklyn, Caroline continues to work on helping all people Fill Up and Enjoy Life!
